Healthy ice cream, aka “nice” cream

Who doesn’t love ice cream? This healthy “nice” cream can be as easy as one ingredient, bananas. But…

…if they aren’t you’re thing and you want to pimp things up a little more, we’ve included some other options for you below.

We love this with added collagen, if you have a good quality powder it’s tasteless and even adds to the creamy texture. Along with nutritional benefits it brings. It you want to know about those, read this article.

Berry collagen nice cream

Recipe

serves 2-3

Base ingredients:

  • 3 ripe chopped bananas (peeled + frozen) or 2 cups of mixed berries (frozen) or 2 cups of chopped frozen mango - if you want you could do a blend of them all, or mix as you fancy

OPTIONAL ADD-INS:

  • 1-2 tbsp collagen powder (optional for added protein and benefits - see the article about this here, plus some fav brands)

  • 1 tsp vanilla extract

  • 1/2-1 tbsp honey or maple syrup (optional for added sweetness, but not really needed especially if you use ripe bananas)

  • 1/4 cup unsweetened almond milk or milk of choice (can loosen or smoothen texture) - if you have a really high speed blender e.g. vitamix, it’s often not needed and the texture will always loosen as it melts or is blended

  • 1 egg white - careful consuming raw eggs use red lion stamped and fresh eggs. We sometimes like to add this to a berry nice cream, it can also help texture.

instructions:

  1. Blitz:

    • Place the frozen fruit into a high-powered blender or food processor.

    • Blend until smooth and blitz into pieces, scraping down the sides as needed. If the mixture is too thick, here you could add a splash of almond milk to help it blend.

  2. Add Optional Ingredients:

    • Add collagen powder, vanilla extract, egg white, and honey or maple syrup if desired.

    • Blend again until everything is well combined and the mixture is creamy.

  3. Serve Immediately:

    • Serve the “nice” cream immediately for a soft-serve consistency.

  4. For a Firmer Texture:

    • If you prefer a firmer texture, transfer the nice cream to a container and freeze for an additional 1-2 hours. Allow it to sit at room temperature for a few minutes before scooping.

Add fresh fruit, nuts, seeds, or a drizzle of nut butter on top for extra flavour and nutrition.

  • Storage:

    Store any leftovers in an airtight container in the freezer. Let it thaw for a few minutes before eating to soften it slightly.
